So, last week, or maybe it was the week before (im all thrown off with this jury duty thing), I found myself with a plethora of over ripe bananas! Since I had found my loaf pan since my I’d last baked banana bread, I figured I better give it a workout.
I set out to make banana bread….once again not double checking the recipe against the ACTUAL contents of my pantry, as opposed to the contents I ASSUMED I had!
This recipe called for three things I didn’t have: buttermilk, 2 cups of flour, and brown sugar.
Now you would think that I would have purchased some brown sugar after my last baking debacle, or I would have remembered that I was low on flour. Uh. Nope.
So, I wasn’t too worried about the buttermilk, I just mixed vinegar and normal milk together in the correct proportions. Don’t ask me what they are now.
Flour…well..I had already mixed the wet ingredients when I realized I didn’t have enough flour. So….I made oat flour. Or what I am calling oat flour, I dumped a cup of quick cooking oats in my food processor and went to town. It had the consistency of flour! That is good enough right?
Anyway, then sugar….I cut the sugar in half and just used white sugar.
So I mixed and everything was going swell, but I think I got a little excited about mixing and thought I was making cake, so the dough did not rise. At all. Overmixing curse.
Oh, I almost forgot another key fact. I had 1 extra over ripe banana, so I cut up some slices and placed them on top of the bread. I’ve seen this before, and it always looks beautiful and declicous. Those bananas? They sank.
And my bread stuck to the bottom of the loaf pan, even after extensive cooking spray.

banana bread oatmeal.
I seriously had the best bowl of oatmeal this morning.
I was simple.
Oats
banana
honey
peanutbutter
vanilla
cinnamon.
It was like banana bread.
I've been coooking bananas into my oatmeal since the first time I read Kath's blog. But, I've always put the ingredients in the bowl in this order: oats, water, bananas.
today I did: oats, banana and then water. And I finally got that gooey banana goodness mixed in.
It was aamzing. And I didn't take a picture. damn.
Now, I just need to get my hands on some Barney Butter!

back on track...
Well, I didn't manage to start me week off right...but I am def. starting the weekend that way!
I dragged my butt out of bed, and made it to the gym. Did a 40 minute elliptical workout that I found on www.fitsugar.com it's one of the best, and I dont' get bored at all! I didn't want to pack oatmeal last night, so I made my self two bagel sandwiches with peanutbutter and banana. I warmed them up in the microwave this morning at work to take the cold edge off, but not melt everything. I also had a cup of coffee with skim and splenda.

something new and different-a little
When I went to bed last night, it was "Warm" out. Ok...it was like 30 degrees...but the sky was clear, and I thought we wouldn't have any snow. Ha. When I woke up this morning it had snowed, and looked just like it did on Friday when I spun off the freeway. I debated going to the gym...but i know that no matter what the roads are better at 5:30 when the traffic isn't as bad. So, I went in and woke up my husband and told him I was going to take is car to work. It's a little honda, with front wheel drive. He carpools to work with his boss, and doens't go farther than a mile from our house to their pick up point...
So I took the back roads (there were already three slide offs or incidents on the 8 miles of freeway I would have need to travel) and it took me 30 minutes...I made it safely, but it severely cut down my gym time. Darn this fulltime job that dictates my schedule. I only got about 16 minutes on the elliptical. I'm going to try to go "walking" in walmart during lunch. Some moving is better than none right?
I didn't take a picture of my pre-work out toast. But it was the usual..only no jelly.
Here is my breakfast, something different! I bought some Thomas' Whole Wheat English Muffins on saturday. We only have a toaster oven here at work, and I didn't wnat to burn them, so they didn't really do anything but get warm. I then put 1.5 Tablespoons of peanut butter on them. I measured the night before and put it in a plastic baggy, cut of the tip and squeezed it out pastry cheft style! Topped with a banana. I have one more banana after this....getting mushy. Ick. Breakfast was at 7:45 and I was hungry for my orange at 10:30. My tummy is still telling me its a little hungry. I'm going to chug some water..and possibly opt for another little snack in a bit.!

Finally Friday!
Well, I guess it doesn't feel like it's "FINALLY" friday..this week went by pretty quick, at least it feels that way, now that it IS friday!
I REALLY didn't want to go to the gym today...but I did. 2 weeks of all five work days, and really it does feel good to be back in the swing of things. Today I did 40 mins on the elliptical, and 5 minutes of abs, and uh...not enough stretching! It was a decent workout..but not one of those really great ones..ya know?
Pre-Workout fuel: 1 piece breadlovers multi grain, 1 tbsp peanut butter, and 1 tsp pumpkin "jelly".....This is Soooo good, and a nice break from normal jelly. The good old standard oats, almonds, cinnamon and banana breakfast. I'm thinking of switching it up. I almost to my saturation point! :)

CRAZY morning!
Today has been CRAZY so far! It started out with our staff meeting being moved up half an hour, and it's just been busy since then. I haven't even gotten through everything I usually "check/ read" before I get started on work.
According to UPS, my new camera is supposed to be here Wednesday! Woohoo! I am so excited about that. I can't wait to start making these posts pretty with pictures!
I tried something different for my breakfast this morning. Instead of having frozen fruit in my oatmeal, I mixed in a banana. YUM. Talk about a great natural sweetness. I got hungry around 10:20, so I had a cashew cookie Larabar. ALSO DELICIOUS! It's almost lunch time, and I'm having raw veggies with left over mexican food! Yum.
I think tonight for dinner I might try a recipe from Jenna at www.eatliverun.com
We'll see how it goes!
