hot n' spicy!

ok, I made a FANTASTIC recipe last night. I got it out of my Betty Crocker cook book. Congratulations Betty...you rocked.

I like to peruse my cookbooks, and food blogs before I go grocery shopping. I've also been trying to incorporate more meatless dinners into our rotation. It's gets to easy to fall back on chicken and ground beef!

So, I was looking through the vegetarian section, for recipes that my extremely carniverous husband would be willing to eat. And I found.....Southwestern Fettucine!

Seriously, really good.

Here is the recipe: adapted from Betty Crocker
12oz of fettucine
olive oil cooking spray
1 cup salsa
2 tablespoons hot sauce
1/4 cup water
1/2 cup frozen white corn
1 can black beans, rinsed and drained
1/2 tsp cumin

I think that was all the ingredients.

Directions:

1.Cook fettucine according to packet. Drain, and set aside in a medium serving bowl

2. Spray fettucine 2 or 3 times with olive oil cooking spray, tossing between sprays.

In pot that fettucine was cooked in, mix remaining ingredients, until corn is tender.

Serve fettucine in bowls and top with sauce.

This was delicious. I think it's kicker is really the cumin. What i liked about it though, is that you can really create diversity with the sauce. Different Salsas (the one I used was SUPER hot, even though it was labeled as medium) Different Hot Sauces (I used Tapatio, my favorite!) Different beans even.

And healthy...and no meat!

oo, that sounds nice! i've never thought to try something like that, but when you think about it, it's something that makes perfect sense. pasta with veggies and tomatoes, via the salsa, all with a great kick!

my mom used to make spaghetti with canned chilli and cheese on top. it was delicious and canned and horrible for you: comfort food.
